Yes, you can choose any date you like, providing the star you want is available on that date. The only date unavailable is Christmas Day.
What happens if I need to have an exhibition on a particular date?
If the particular star you would like is not be available, such is the choice of stars we have that there is likely to be a sunstitute, without any loss of entertainment quality.
